Jack Fruit

This is a fruit you learn to love. In the beginning I had a few pieces. Then it just grew on me. Now when we have it I eat a lot of it. It's quite a large fruit. Many large seeds with pulp around it. Next time I will take a picture with an open one. This was taken today at the Sunday mercado. Right now it is in season here in Bahia, Brazil. Here is some information on it.

Gold Green, Ouro Verde

I decided to call this dish Gold Green because I saw a sign of a store here in Brazil called, "Ouro Verde" of the same meaning. To me it sounded so strong and healthy. Fresh fruit salad with some fresh orange juice in it and I sprinkle green superfood over it. It looks somewhat swampy with little nuggets of gold sticking out of it. Good alternative for a smoothie.

Pinha and Bananas

Pinha is one of my favorite fruits in Bahia, Brazil. English name is sweetsop. Looking at the outside it is so contraty of what is in the inside. So beautifully packaged by nature. The shell protecting the soft pulp with many black seeds, which I have been collecting. Taking a spoonful into the mouth and eating the creamy pulp around the seeds which come off perfectly is such a treat.

How beautiful is this cluster, "hands" of bananas. A gift from a family in one of the villages. Brazil is the second highest producer of bananas in the world, second to India. The majority of the large production serves its domestic markets and the largest consumer of the fruit in the world. Below is the red variety. Also a gift.

Passion Fruit /Banana Frozen Cream


Blend in food processor:
frozen bananas
1 or 2 passion fruits, depending on size
coconut pulp
small handful of almonds

that's it. so easy. delicious.

Fruit Cobbler in Paradise


Here's a deep-dish fruit dessert with topping. I changed it up a bit from last time, being that I am in Bahia, Brazil and the ingredients can be different from New York.

blend in food processor and pour into casserole dish
2 cups peaches/strawberries
3 dashes cinnamon
3 tablespoon coconut oil
coconut pulp
1/4 cup honey
dash of salt

Add bite size pieces of peaches and strawberries or one or the other on top.

pulse in food processor and pour onto fruit mix
1 cup pecans
coconut pulp
2 tablespoon coconut oil
2 dashes of cinnamon
1 teaspoon of vanilla

dehydrate

In Bahia my dehydrator is the sun. It works beautifully. I place the dish into a pan with water so no ants get into this delicious sweet meal. Next time i will make it with mangoes, passion fruit and cashews, doesn't that sound exotically delicious?

Look at this fabulous branch of coconuts bought at the mercado. We have become daily coconut water drinkers, so we need quite a bit and the price is affordable at 50 cents a coconut.

This is half fresh orange juice, half coconut water. Oh so delicious.

Coconut Water

I have been drinking one or two coconut waters per day. My body is just absorbing it, craving it. The nourishing feeling is amazing. Coconut water is filled with natural electrolytes. What a perfect food. The pulp is put in smoothies, eaten right from the coconut or saved in the fridge for a great snack. At the mercado we buy them by the branch, there's about 7 on it at 50 cents each. At the coconut stands they are about $1. Loving them oconuts.
