There are many variations of a kale salad. This is how I prepared my latest one.
One bunch of kale, middle stem cut out...save it for juicing. Chop or tear leaves into small pieces.
Add:
olive oil
apple cider vinegar
salt
cumin
hemp seeds
nutritional yeast
......and dash of cayenne
toss it and serve
add chunks of avocado!
Oh soooo good. Love them greens!

Perfect salad for spring!
Kale is inexpensive, healthy and delicious! Unfortunately, it isn't often eaten as a staple in the North American diet. Great recipe! Thanks for sharing.
