Maca Coconut Cacao Nibs Sauce for dipping

This is a delicious dipping sauce for fruit. Maca, coconut oil and cacao nibs. For a personal sized amount I used 2 teaspoons coconut oil (soften it if needed), 1 teaspoon maca powder, 1 teaspoon cacao nibs. Mix and ready to dip your fruit pieces. Great little breakfast or any time snack. If a little sweeter is desired, add a bit of agave. Yum!!

Green cocktail with horseradish

You want something potent, cleansing and protecting?

Add a dollop (I added about one teaspoon) of horseradish into your green drink. Gives it a nice flavor. It's not too strong, the green absorbs some of the spicy taste.

Add horseradish, preferably homemade, to everything. It really is a healthy, simple food.

Horseradish Sauce


Making horseradish sauce is very simple. Be prepared to have watery eyes. You are on your way to detoxing.

Peel the horseradish. Cut into size to fit into the food processor.

Shred in food processor, then use the S blade to chop it. So, you are using the food processor twice, shredding and then the S blade to chop.

When opening the cover of the food processor don't get too close, it has a powerfully strong aroma.

In bowl mix the chopped horseradish, Himalyan crystal salt and apple cider vinegar.
Start with a little bit, mix well, let it sit a few minutes, taste and add more if needed. Make sure it is not too dry, add more apple cider vinegar to keep it moist.

Store in jars, it will keep for a few weeks in the refrigerator.

Add to anything, it gives it a nice spicy kick and you're getting healthy benefits.

Horseradish has many medicinal characteristics. Antibiotic, antibacterial, stimulates the body's immune system, use for high blood pressure. Here is more information on

Baby Arugula

I was going to make a salad for myself. I opened this package of baby arugula and just started to eat it right out of the bag. Arugula has such a nice flavor all by itself which I love. So I am grazing. Nothing to clean up. This was easy and delicious.

Himalayan Crystal Salt Slab/Block/Brick

I received a gift of a beautiful Himalayan crystal salt slab/block/brick. I cut up a jicama and placed it on the slab. It looked so pretty and tasted very nice of the salt. The longer you leave it the saltier it gets. I will play with this some more. It will last a long time. Anyone have any suggestions, please let me know.

Kale Salad

There are many variations of a kale salad. This is how I prepared my latest one.
One bunch of kale, middle stem cut out...save it for juicing. Chop or tear leaves into small pieces.
Add:
olive oil
apple cider vinegar
salt
cumin
hemp seeds
nutritional yeast
......and dash of cayenne
toss it and serve
add chunks of avocado!
Oh soooo good. Love them greens!

Arugula Mango Hemp Tahini Smoothie

Back in the USA!

Starting to add tahini to my smoothies which has great calcium support. It also gives a nice creamy texture to it and nice flavor.

This morning's smoothie creation was:
mango
banana
hemp seeds
tahini (I used 2 tablespoons)
arugula
water

blend it up....keep healthy!

There are two types of jack fruit, soft and hard. The soft for me is too mushy and too sweet. The hard one is a nice texture and flavor. Have been enjoying quite a bit of it.

Blended Salad

I haven't made this in a while.
Such a great, super meal and a healing food.
Being that it is blended you can eat a lot of greens.

In blender add:
1/2 cucumber, chunked
1/2 tomato, chunked
small piece of garlic
small amount of water
blend above 3
keep blender spinning and through the top of the hole of the cover add:
romaine leaves, 5-6
small handful of parsley
when fully blended add:
1/2 avocado

pour into bowl and add spices:
I like Himalayan Crystal Salt and a squeeze of lemon juice
chunks of avocado is nice too.

Parsley: Blueberries: Pear: Banana

Beautiful Purple Smoothie

Bunch of Parsley
1 pear
1/2 bag of frozen blueberries
1 banana
water

place in blender cored and cut up pear with 1/2 cup water
keep blender going and take out the middle of the cover so there is the hole to put the rest in.
add blueberries
little by little add parsley
add banana
add more water if needed

oh so good and pretty. really!

First Smoothie of 2011

Starting the New Year with this beautiful, healthy green smoothie.
1 pear cored & chopped
1 banana
big handful or more of spinach
water

place 1/2 cup of water and pear in blender
blend, keep it spinning and take the middle of the cover off
add spinach while it's spinning little by little
when all blended add banana
if more water is needed add
to make it cold add ice

a delicious smoothie.
